Wuzhong is famous in Ningxia for ShouZhua which is lamb ribs slow cooked so that they are tender. ShouZhua means grab. The idea is to pick up the piece of meat, dip it into a dark vinegar and garlic sauce and eat it. It is a Hui and Wuzhong speciality. This is one of the most famous restaurants in Ningxia for this dish.
